With the sun flirting in the last few weeks, it won’t be long until we can retire the jumpers and jeans and see what fits from the summer wardrobe. Jason Vale can help.

 

The good news is there’s still time to get ahead of the game before summer arrives, and my freshly extracted juices are definitely the way forward for slimming down, fuelling up and bringing a taste of summer.

Here are two of my all-time favourite summer coolers from my Funky Fresh Juice Book. No blender or added supplements required – just juice the ingredients and pour over ice.

Fresh Mint Lemonade

Ingredients: Golden Delicious apples, 2 lemons, fresh mint leaves,
1 handful ice cubes.

Put one apple into the chute, pack in the mint and lemon and then finish with the other apple. Juice the lot and pour over ice and mint. If you are having a BBQ this summer, why not do something a little different. Simply set up your juicer to the side of the BBQ or at the ‘kitchen hub’ (where most people end up) along with a load of apples, lemons, fresh mint, glasses and ice and get your guests to make their own ‘homemade mint lemonade’ It’s a wonderful talking point, it’s interactive, it’s fun and it helps to get the party going. Plus the little ones will love it, as it tastes just like lemonade but without the refined sugar.

Studies have found that peppermint stimulates the gastric lining to produce enzymes that aid digestion and lessen the amount of time food spends in the stomach.

Summer Lovin’

Ingredients: 1 Pink Lady apple, 1 pear, 1 medium parsnip, 1 handful fresh mint leaves, 1 handful ice cubes.

Load the pear and parsnip in the chute, then pack in the mint behind it. Place the apple behind the mint and juice the lot, pour over ice and enjoy. Best served in an open top Cadillac at a drive-in movie, taking sips in between singing ‘Grease Lightning’ at the top of your voice.

Did You Know: The unique spicy-sweet flavour comes from the first frost, which converts its starches to sugar.
